Urgent EPS help needed!

I haven't had to do this for about 7 years so am quite confused! I have a logo that I need to turn in to a proper EPS file with transparent background (or white bits!). Whenever I delete the background and save as an EPS, when it's opened up again the background is white. Can anybody help please?!

I'm using Elements at work but I have CS3 at home if that will make life easier

Do you have the full version of Acrobat and Acrobat Distiller? You could try using Distiller to make a PDF of the EPS file, and then try opening the PDF in your version of Illustrator.
