Scott Kelby's 7-Point System question

First, I am an absolute Photoshop newbie. I am a digital photographer, and I want to use photoshop to improve my pictures.

I recently ordered the book Scott Kelby's 7-Point System for Adobe Photoshop CS3.

I have a trial version now of Elements 6.0 -- am trying to decide if I can get away with using this, or if I really need to spring for CS3. (I am not a professional, just a hobbyist, but I am a geek, so I am willing to spring for the full version, if truly justified.)

The first few steps were opening the photo in Camera Raw, and making some adjustments.

When I got to the first step inside Photoshop once the image was opened, i was a bit flummoxed.

The book instructed me to "Create New Adjustment Layer" and choose "Curves".

I don't think this feature exists in Elements, unless I'm blind, or it's labelled differently.

But here is what the book uses Curves for, and I'd like to know if there's an alternative in Elements to do the same:

In Curves effects presets, choose Strong Contrast (RGB).

Next we use Select Target Shadow Color Picker and Select Target Highlight Color Picker.

Can these things be done in Elements 6.0?

As I progress through this first lesson, and find more things that don't seem to exist in Elements, I am sure I will add to the list of questions.
