Need some help! Sports Edits

I do edits for my daughter's high school field hockey team. I am trying to figure out how to make an edit using a large logo of theirs, changing the colors to white and making it large like the dolphins picture attached. Can anyone help out with that?

I am also looking to make it have the effect of the second picture for the cover, it has this grainy noisy, cloudy look to it, can anyone show me how to do that also?

General description or walk through would suffice. I can do the work
OK! Here's one way............the easiest for me anyway.

Open your logo.
Create a new layer.
Use Color Range to select the areas that you wish to change the color.
Fill in the new color.
Repeat the process until done.

My usual answer for these types of edits is that it's almost impossible to say how they are created. There are too many variables involved to just take a guess. I would say that it's a combination of multiple filters such as, HDR Toning, Camera Raw, Neural, or Topaz. There is masking and clipping masks involved as well as several other Ps techniques.

I did find THIS TUTORIAL that may offer some ideas for you to consider. Take a look.
