Welcome riptorn,
Actually it is very easy. When you open an image it goes to a special layer called "Background", there's not much you can do with this layer.
But you can add text!!!
Text goes to another layer. All you have to do is click the text tool (or press T on the keyboard) then click anywhere in the canvas and start writing.
At start the text tool will use the foreground colour you have selected.
When finished, press the "V" on the option bar (top of window, next to the menu bar).
Now you have a text layer and going to Window->character you can change almos about anything in that text...
For starters thats enough, if you need more, say so.

Thanks Nomission, I did what you said, but when I try to add text all I get is a small square?? I have added text before on JPEG'S but some JPEG'S will not let me add text?. I do not know why?

Check the resolution of your image, it's probably super high. Trust me, you are typing text, you just don't see it (zoom in for example)

Try looking at your color mode.

Sometime index or lab might create limitations with respect to how files can be manipulated.
Go to your image menu and change the color std and try.
Also, following the previous piece of advise, go into size and make sure taht your piece is either 300dpi or 72dpi if you're working for online projects.
Hope this helps.
