JPEG options

How to set my JPEG options to the best quality without having to do it for every image since I'd like to add it into an action & change it from medium.

when you make the action, and the Jpeg quality dialog box comes up, physically type in the quality number, and that will force it to always use that number, as the action will ALWAYS type that number in. (if you don't, that dialog box will always use the last number you typed in there)
