I want to pursue a career in freelancing. I'm currently building my portfolio and after it is done I will build my own website, hopefully one year from now it will be all set in place.

Things I love doing in Photoshop and that I want to pursue a career on: retouching (portraits, food, real estate, products, maybe in the future wedding photos as well), manipulations, restorations, fixing photos (by hiding / adding certain people / objects / etc) basically anything. I do not design logos, brochures, cards or anything in that matter.

I've heard terms such as: Graphic designer, Digital artist, Retoucher, Creative Production Artist, Visual Designer, etc.

I don't know in which category I fit the most, any help? (I currently call myself "Photoshop enthusiast")

The labels are quite liquid these days and the titles can change from company to company even though the responsibilities are exactly the same. @PRESTON offers a good title. You can also try Digital Retouching Specialist or Photoshop Retoucher. I wouldn't use "designer" in your title since that covers Illustrator and InDesign skills - unless you have those as well.
Most important is when you provide your curriculum vitae/resume/job summary, you clearly list your skills and what you can do. The title is just an invite to look - what you can do is what follows in your summary.
And show 'em what you can if you can include samples.
Hope this helps.
