I want to try and recreate this image - how do i start please?

I've never done anything like this in Photoshop. But I've done in Corel Draw.

It's the same like creating a painting or drawing.... draw the outline, fill with color, add shadows and hilites.

To start you off .....

Use your pen tool to create the outline shapes.... multiple and grouped barrel stave layers and barrel ring layers. DatsALottaLayerWork. Patience of a Saint and eye to detail is required.

Use stock image textures to map over the shapes and mode layer adjustments. Or unless you're up to it, create the textures yourself.

bevel the individual edges and add edge hilites. And most important - SUBTLE shadows.

Mostly trial and error , Even after years of doing it in Corel, I go through trial and error to get the image right.

I'll give this a try later after work done... to do the line drawing in Corel (I'm better and at ease with it's pen tool) and give it a touch up in PS....

+1 to dv8's approach.

However, if you want to save yourself some time using the pen tool, you can always use the "image trace" tool in AI. At least that will get you to this stage with just a few mouse clicks.

At that point you have to do some editing of the paths, but I usually find that a lot easier than starting from scratch.
