I want students to create different parts of a character (head, middle and legs/feet) and mix and match them. Is there an easy was to do this?

Again, you must be more specific.

If your talking about using different parts of human images and trying to mix them and make them match, then this is a fairly advanced procedure. It can encompass several techniques like background removal, layer masking, cloning, painting, as well as other blending techniques.
