Help me with this (face/shadow content)

Hi guys, this is my first thread, I want to make a shirt like these

But I have no idea how to turn the actual photograph into the shadows like on those shirts, I don't know what the technique is called or anything, so any help/tutorial/advice would be greatly appreciated, thank you
