Enlarging a pdf object and smoothness?

Hey everyone, I'm trying to re-design a menu for my restaurant. I grabbed the pdf menus off the website to get a few designs that they use on their menus. I scaled them up to make them larger for the menu that I'm doing, and they scaled perfectly and look really smooth. However, when I try to change the color of them with the paint bucket, they look really jagged and choppy. Is there something I'm missing here? How do I make them smooth and alter their color at the same time? Thanks!
 
It would help if we could see the images.

I can tell you that images on the web are for the most part low res. When you blow them up they will have the sort of problem you are describing (and often others as well). If you can, I would suggest getting the original images or have the images scanned from your menu if possible. If this is not possible, we might be able to FIX the low res images, at least to some degree. However, we would have to see the images you have m in order to advise you further. Without knowing what we are dealing with there is no way to know what exactly would be possible and what the best way to get you the best results would be.
