Embed fonts and pdf

Hi All, I am working on a project in PS 7.0 that requires embedded fonts. It's just a static page with text. This must be a box to click upon saving but I cannot find the process in the help files. Also, I have 15 pages that I can save as individual pdf's but I want to save them all into one big pdf file. It's a digital booklet that I'm uploading with an album to iTunes. Tune Core is the distributor and they have given me these requirements.
