Black & White With Color...Touching Up Flaws

How do I make a picture into black & white while still leaving parts of the picture in color?

Also, when covering up a flaw I can not get the color to match. I have used the color picker and chosen the area closest to the area I am trying to cover up and it is still not working out. Any ideas?
 
CS3 has a Black & White adjustment layer, but...

without that, I suppose one idea is to convert a copy of your layer to a grayscale image and place the grayscale image on top of the old one. Then use the layer mask to expose the colored version.

I'm sure some pros would know of a more elegant method though.
 
You can use the lasso tool to make a selection of any part of your image.

use the DESATURATE command to turn the selected part of the image to grayscale.
OR
Open up Hue/Saturation/Brightness and lower the saturation to the level of gray you desire.
OR
With your selection active you can use an adjustment layer if you do not want to disturb the original color pixels.
