Sometimes I have seen many uses Channel Mixer Tool from Photoshop. But I don’t get understand what the benefit using the Channel Mixer tool.

Pick an image and just play with the settings to mix things up. This will give you some idea of what this adjustment does to selective colors.
This tutorial in Sam's LMGTFY is great at demonstrating a more sophisticated usage.
Here's how I changed the atmosphere in this premade background (#36) by fairiegoodmother @ deviant arts.
